Cooking Time: 20 minutes
2 eggs
1 small potato, thinly sliced
1 onion, sliced
Salt and pepper to taste
1 tsp oil
A handful of microgreens
Heat oil in a pan and cook sliced potatoes on low heat until soft.
Add onions and sauté until golden.
Beat eggs with salt and pepper in a bowl.
Mix the cooked potato-onion into the egg and add the microgreens of your choice into the mixture.
Pour the mix back into the pan and cook on low until set.
Flip gently or cover to cook the top.
