Mashed Sweet Potato and Carrot
A rich and moist chocolate cake that's perfect for any occasion.
1 small sweet potato, peeled and diced
1 small carrot, peeled and diced
A small handful of finely chopped pea shoots and beetroot microgreens
½ tsp ghee (optional)
Steam or boil the sweet potato and carrot until soft.
Drain and mash them together with a fork until smooth.
Stir in the ghee and microgreens while it’s still warm, so the greens soften a little.
Serve gently warm — simple, sweet, and quietly packed with nutrients.
