Chicken Salad

A light, creamy chicken salad perfect for sandwiches, wraps, or a fresh lettuce bed.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt (optional, for tang and lightness)
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. In a large mixing bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, and garlic powder.
  2. Stir in the chicken, celery, red onion, and parsley until well coated.
  3. Season with salt and pepper to taste.
  4. Cover and refrigerate for at least 30 minutes to let flavors meld.
  5. Serve chilled on a sandwich, with crackers, or over a bed of greens.
