Chicken Broccoli Pasta with Red Microgreens
Enjoy a protein-packed Chicken Broccoli Pasta topped with vibrant red microgreens
1 cup cooked pasta (penne/fusilli)
200g chicken breast, diced
1 cup broccoli florets
1 tsp olive oil
1 bunch of spring onions
Salt and pepper to taste
Red microgreens (amaranth or beet)
How to Cook:
Heat oil in a pan. Sauté garlic until fragrant.
Add chicken and cook until browned and done.
cover and steam broccoli for 3–4 minutes.
Toss the broccoli and spring onion into a blender.
Add cooked pasta,the sauce and season with salt and pepper.
Top with red microgreens before serving — bold in color and taste.
