Chicken Broccoli Pasta with Red Microgreens

Enjoy a protein-packed Chicken Broccoli Pasta topped with vibrant red microgreens

Ingredients:

  • 1 cup cooked pasta (penne/fusilli)

  • 200g chicken breast, diced

  • 1 cup broccoli florets

  • 1 tsp olive oil

  • 1 bunch of spring onions

  • Salt and pepper to taste

  • Red microgreens (amaranth or beet)

How to Cook:

  1. Heat oil in a pan. Sauté garlic until fragrant.

  2. Add chicken and cook until browned and done.

  3. cover and steam broccoli for 3–4 minutes.

  4. Toss the broccoli and spring onion into a blender.

  5. Add cooked pasta,the sauce and  season with salt and pepper.

  6. Top with red microgreens before serving — bold in color and taste.
